The main ingredient in mascarpone cream is what some people call cheese, but it is more of a "milk derivative." The origin of mascarpone is in Lodi. Its production is also widespread in Cremona, Mantua and other cities in Lombardy.
Mascarpone cream is, along with tiramisu, the most famous recipe using this cream-based ingredient. It is heated to 85-90° (some sources say 95°) and then citric acid is added. The production process consists of several steps.

- 100 g sugar
- 3 eggs
- 40 ml rum
